Oh, Golly Gee! Our lettuce is simply beautiful and so tasty. We are eating salad or just plain lettuce daily - from our garden.
We have also harvested green beans already. The cabbage, tomatoes and peppers will be ready soon! The carrotts, eggplant and everything else is also doing well!
Last Saturday, Josh, Ian and I went to a Farmer's Market downtown (I'm sooo excited these are starting!). That afternoon Josh prepared eggplant parmesean with homemade marinara - on top of garlic parsley noodles from Shipshewana - with a salad on the side. You will notice his hand on the left side of this picture - chopping vegetables. :) The tomatoes, eggplant, basil all came from local growers. The meal was amazing! I just had to share it with you.
