Here's a fun, vegetarian alternative for traditional taco meat. We've recently enjoyed these Walnut Tacos, and they're fabulous. So... I thought I'd share!
Walnut Taco Meat
1 cup raw walnuts
1 TBLS low sodium soy sauce
1/8 teaspoon chipotle pepper
1 teaspoon cumin
1 teaspoon olive oil
Mix in food processor until it looks like large crumbs.
To assemble your tacos, you can use some or all of the following:
Corn or flour tortillas
Large lettuce leaves used as lettuce wraps - Bibb or Romaine
Your Walnut Taco Meat
Your Walnut Taco Meat
Queso Fresco Mexican white cheese
Shredded mozzarella cheese
Avocado, diced
Green onion, diced
Tomato, diced
Cilantro, chopped
Your favorite salsa
Put together as you would regular tacos.
